Cocoa butter in balms: bloom, crystal forms, melting point and rates
Cocoa butter for balm makers: the six polymorphic crystal forms, why fat bloom appears, natural against deodorised, melting point, snap and usage rates.
Cocoa butter is the only common cosmetic fat that behaves like a confectionery ingredient, because it is one. Everything awkward about it in a balm, the snap, the bloom, the way an old stick turns pale, comes from a single property: it is strongly polymorphic. The same molecules can pack six different ways, and which one you get depends on how you cooled it.
Cocoa butter (INCI Theobroma cacao seed butter) melts at about 34-38 C and runs 33-38% stearic, 32-36% oleic and 24-30% palmitic acid. It is the hardest of the everyday butters after kokum. Its six crystal forms explain both its snap and the white film called fat bloom.
What cocoa butter is
Cocoa butter is the fat pressed from roasted, hulled cacao beans, the seeds of Theobroma cacao. Cocoa nibs are roughly half fat, and pressing separates that fat from the solids that become cocoa powder. The cosmetic INCI name is Theobroma Cacao (Cocoa) Seed Butter.
Its composition is unusually simple for a natural fat, and that simplicity is exactly what makes it useful. Three fatty acids account for around 95% of the total, and the great majority of the triglycerides carry a saturated acid on the outer positions with oleic acid in the middle. That structural uniformity gives cocoa butter a narrow melt range and a definite snap, rather than the slow, wide softening of shea butter.

Because the polyunsaturate content is so low, cocoa butter is one of the most oxidatively stable fats in the workshop. Two to five years in cool, dark storage is normal, which is a strong practical argument for it in anything that has to sit on a shelf.
Natural, deodorised and cocoa butter substitutes
Three quite different things get sold under similar names.
- Natural or prime pressed cocoa butter. Pale yellow, smells clearly of chocolate. The scent is the point for some products and a nuisance for others, because it will not sit quietly under a fragrance.
- Deodorised cocoa butter. Steam-stripped under vacuum to remove the volatile aroma compounds. Near white, near odourless. The triglycerides are essentially unchanged, so melt point, hardness and polymorphic behaviour are the same. - Cocoa butter substitute, equivalent or replacer. Engineered blends, typically from palm mid-fraction, shea stearin, illipe or sal, designed to melt and set like cocoa butter. Perfectly usable material, but it is not cocoa butter and should not be labelled as such. The chocolate smell of natural cocoa butter is strong enough to dominate a lip balm at 10% of the formula. If you are building a flavoured product, start with deodorised and add scent deliberately. Reading which is which on a finished product label is covered in reading a balm label.
The six polymorphic forms
Polymorphism means the same triglycerides can crystallise into several different lattice arrangements, each with its own density, melting point and stability. Cocoa butter has six, conventionally numbered I to VI, described in the classic 1966 work of Wille and Lutton. Almost no skincare page gets this right, so here are the numbers.

Form V is what confectioners chase. It has a melting point just below body temperature, a fine dense crystal that gives gloss and a clean snap, and it stays put. Forms I to IV melt too low, feel soft or waxy and convert to something else over time. Form VI is the endpoint of that conversion: it is stable, but it melts a couple of degrees above skin temperature and its coarse crystals are what you see as bloom.
Fat bloom, and why it is not spoilage
Fat bloom is the pale grey or white film, sometimes streaky, sometimes uniformly dusty, that appears on the surface of an old cocoa butter balm or an old chocolate bar. Two things cause it, usually together. Liquid fat migrates to the surface and recrystallises there. Existing crystals convert from form V to the more stable form VI, growing larger in the process. Either way you end up with coarse surface crystals that scatter light instead of reflecting it, which reads to the eye as white.
It is not mould, it is not water, it is not rancidity, and it is not a sign the product is unsafe. It is the same fat you started with, arranged differently. Warming the surface gently and cooling it fast will usually clear it, and re-melting the whole thing and pouring again always will.
Distinguish bloom from mould before you dismiss it. Bloom is a smooth, dry, fat-coloured film that has no texture under a fingertip and no smell. Mould is fuzzy, coloured, often spotty and usually smells. Mould in an anhydrous balm means water got in, which is a real problem: see mould in balm.
Bloom is also easy to confuse with sweating, which is liquid oil beading on the surface rather than crystals forming on it. That has different causes and a different fix, set out in balm sweating.
Tempering, and the practical alternative
Tempering is the controlled process of melting a fat fully, cooling it to grow crystals, warming it slightly to melt off everything except the desired stable form, and then setting it while those crystals seed the rest. For chocolate the sequence is roughly melt to 45-50 C, cool to 27-28 C, then hold and work at 31-32 C.
You almost never need this for a balm, for one simple reason: in a balm, cocoa butter is a minority ingredient in a matrix already structured by wax and diluted by liquid oil. The wax crystal network sets before the cocoa butter has much say, and the liquid oil interferes with clean form V growth anyway. Chasing a confectioner's temper in a 15% cocoa butter lip balm is effort spent on the wrong variable.
The practical alternative is the same rule used for grain control across every butter:
- Melt completely. Water bath at 75-80 C, held until there is no haze. Undissolved high-melting crystal is the seed for every later problem.
- Do not exceed 85 C for long. It darkens beeswax and degrades tocopherol without helping the cocoa butter.
- Pour at the right window. Lip tubes at 65-72 C, tins at 60-68 C. See pour temperatures.
- Cool fast. Cold water bath or twenty minutes in the fridge. Fast cooling forces many small crystals to form at once, which is what suppresses both bloom and grain.
- Then leave it alone. Let the filled containers reach room temperature and cure for 24 hours before you judge the hardness.
Hardness, snap and how it feels
Cocoa butter is hard but brittle. A 100% block snaps rather than bends, and in a balm that translates into a stick that can crack or crumble if you push the percentage too high or pair it with a brittle wax. The failure mode and its fixes are described in cracked and crumbly balm.
On skin it applies with more resistance than shea and leaves a firmer, less greasy film. It has real drag on the lips, which is why very few good lip balms use it alone. The physical reason is that narrow melt range: below about 33 C it is essentially solid, and above about 38 C it is essentially liquid, with little of the soft intermediate state that gives shea its cushion. A firm winter lip balm. Percentages are weight percent of the total and add to 100:
- Beeswax 14%
- Cocoa butter, deodorised 15%
- Shea butter, refined 10%
- Castor oil 12%
- High-oleic sunflower oil 48.5%
- Tocopherol 0.5%
For a 100 g batch that is 14 g, 15 g, 10 g, 12 g, 48.5 g and 0.5 g, which fills roughly twenty-two 4.25 g twist tubes before overage. Add 10% overage for what stays in the pot, so make 110 g if you want twenty-four filled tubes. The castor oil is there for gloss and cling, and above about 25% it would start to taste sticky. Pairing cocoa butter with shea and beeswax
Cocoa butter and shea are complementary rather than interchangeable. Cocoa provides the high-melting, narrow-range structure; shea provides the wide, soft, partly liquid phase that gives cushion. A 3:2 cocoa to shea ratio makes a firm balm that still glides. Reverse it to 2:3 and you get a softer, richer balm that will not survive a warm pocket in a tube. The other useful third partner is a neutral hard butter from the mango and kokum pair, which buys hardness without adding scent.
Against beeswax, remember they do different jobs. Beeswax melts at 62-64 C and forms the network that holds the whole thing together; cocoa butter melts near skin temperature and changes how that network feels when it breaks down. Trading one for the other point for point does not work. If a tube balm is too soft, add a point of wax. If it is hard but greasy, add a point of cocoa butter and take a point off the liquid oil. If you use cocoa butter for one thing, make it the firm end of a lip range. Buy deodorised unless you want the chocolate note, store it in a cool cupboard where it will happily last years, and cool every batch fast. Do that and bloom stops being a recurring mystery and becomes something you only see on samples that got left in a car.
