Argan oil: what the tocopherol content buys you and what it does not
Argan oil runs 43 to 49 percent oleic, 29 to 36 percent linoleic and 600 to 900 mg per kg tocopherols. Cosmetic against culinary grade, plus use at 5 to 20 percent.
Argan oil is sold on two claims: an unusual tocopherol content, and a Moroccan cooperative behind the press. One of those is a measurable compositional fact, the other is a supply chain question, and neither on its own tells you whether the oil earns its place in a balm at several times the cost of high oleic sunflower. This page gives the numbers with their methods, does the arithmetic on what those tocopherols actually protect, and ends with a verdict you may not like.
Argan oil (INCI Argania Spinosa Kernel Oil) runs 43 to 49 percent oleic, 29 to 36 percent linoleic and 12 to 15 percent palmitic, with an iodine value of 92 to 102 and 600 to 900 mg per kg of tocopherols, of which 70 to 90 percent is gamma. Use it at 5 to 20 percent of the oil phase and expect 12 to 24 months.
What argan oil is
Argania spinosa is a thorny, slow growing tree endemic to southwest Morocco, where the arganeraie covers roughly 800,000 hectares and has held UNESCO biosphere reserve status since 1998. The fruit is a drupe. Inside its pulp sits a very hard stone, and inside that are one to three oil-bearing kernels which run around half oil by weight. The kernels are cracked out by hand or, increasingly, mechanically, then pressed.
The yield is the reason for the price. Depending on who is counting and whether the pulp is weighed, somewhere between 30 and 40 kg of fruit produces about a litre of oil, and cracking the stone resists mechanisation because the kernel sits in an awkward cavity. Nothing about the chemistry justifies the cost band. The labour does.
Botanically the kernel is a drupe seed rather than a true tree nut, which is a distinction allergen labelling does not honour and neither should you. Treat argan as a nut-derived oil for declaration purposes and read nut oil allergy before you put it in anything sold as allergen aware.
Fatty acid profile and what it predicts

The linoleic fraction is the one number that predicts most of the behaviour. Linoleic acid carries one bis-allylic methylene group, the site where oxidation actually starts, and it degrades roughly an order of magnitude faster than oleic acid does. At around a third linoleic, argan is not a fragile oil, but it is not a durable one either: it belongs in the same stability band as sweet almond and apricot kernel, and nowhere near jojoba, which has no triglyceride to oxidise in the ordinary way. On the skin, that profile reads as medium spread with a fairly quick sink and low residue. It is lighter than olive or avocado, heavier than a light ester such as squalane, and it does nothing structural: argan is part of the liquid phase, and a balm made with it still needs its wax and butter to set. Quoted comedogenic ratings put it at the bottom of the scale, which as comedogenic ratings explains is a statement about residue rather than about follicles.
The tocopherols, and the arithmetic nobody does
Cold pressed unrefined argan oil carries 600 to 900 mg per kg of total tocopherols, determined by HPLC against tocopherol standards. Some surveys report figures above and below that band, mostly tracking kernel origin and how long the fruit sat before pressing. The distribution is the interesting part: 70 to 90 percent of the total is gamma-tocopherol, with alpha usually under 100 mg per kg and delta present in traces.
That is a genuinely well matched profile. In bulk oil, alpha-tocopherol loses effectiveness and can behave as a pro-oxidant once it is present much above a few hundred mg per kg, while gamma-tocopherol keeps working at higher concentrations. An oil holding a third linoleic acid is better served by gamma than by alpha, and argan has the right one. This is the strongest technical thing that can honestly be said about the material, and it is why the shelf life is 12 to 24 months rather than the 9 to 12 the fatty acid profile alone would suggest.
The claim that fails is the next one: that putting argan in a formula protects the formula. Do the sum.

At a realistic 10 percent inclusion, argan brings your balm about one twentieth of a working antioxidant dose. Its tocopherols protect the argan. They do not protect the sunflower, the shea or the fragrance sitting next to it. If you want oxidative protection in a formula, dose it deliberately at 0.1 to 0.5 percent, as described in vitamin E and antioxidants, and consider pairing it with rosemary extract, which works by a different route.
Cosmetic grade against culinary grade
The two grades diverge before the press. Culinary argan is made from kernels roasted for roughly fifteen to thirty minutes, which generates pyrazines and other Maillard products and produces the deep, toasted, sesame-like aroma the oil is known for at the table. Cosmetic argan is pressed from unroasted kernels and is usually filtered only, sometimes steam deodorised under vacuum.

Deodorisation is where the marketing and the chemistry collide. Steam stripping at 160 to 240 C under vacuum removes free fatty acids, aldehydes and odour bodies, and it removes tocopherols and part of the sterol fraction with them. Losses in the range of a fifth to two fifths of the tocopherol content are normal for the process. So the oil sold as odourless, and marketed on its vitamin E, is the one with least of it. If the number matters to your specification, ask for a measured tocopherol figure on the batch rather than a literature range copied from a supplier page.
On smell: virgin unroasted cosmetic argan still has a distinct nutty note that survives into a finished balm at 10 percent and above. It suits a beard or hand product and fights a delicate fragrance. Roasted culinary oil has no place in a balm at all unless you want the product to smell of food, and its higher free acidity shortens the life of the batch.
How much to use, and where it pays
Five to twenty percent of the total formula covers essentially every sensible use. Argan contributes no hardness, so it competes for space with the other liquid oils rather than with the wax, and the practical ceiling is set by cost and odour rather than by any performance limit.

Cost per unit, not cost per kilogram, is the number to look at. Argan typically runs several times the price of a high oleic seed oil per kilogram, so moving it from 5 to 20 percent in a 30 g tin changes the ingredient cost noticeably while changing the sensory result very little. Put your real batch figures into the cost calculator before you commit to a level, and read do expensive balms work better for what buyers actually detect.
Adulteration, and the markers that reveal it
An oil this expensive with a fatty acid profile this ordinary is an obvious target. Sunflower and soybean are the classic diluents, because at 10 to 20 percent addition they shift the oleic and linoleic figures only slightly and can hide inside the published ranges. A routine fatty acid profile will not catch them.
The sterol fraction will. Argan's is unusual: it is dominated by schottenol at roughly 45 to 50 percent of total sterols and spinasterol at roughly 35 to 45 percent, with campesterol essentially absent, typically well under 1 percent. Sunflower and soybean both carry beta-sitosterol as their major sterol and several percent campesterol and stigmasterol. Campesterol appearing at more than about 1 percent of the sterol fraction is a strong flag, and a beta-sitosterol peak of any size is not something genuine argan produces.
The tocopherol distribution is a useful second check. Argan is gamma dominant, with alpha typically under a seventh of the total. Sunflower tocopherols are around 90 percent alpha, so a sample with a raised alpha to gamma ratio points at sunflower. Soybean brings delta-tocopherol, which argan has almost none of. Between the sterol profile and the tocopherol distribution, most commercial dilution is detectable.
None of this is a bench test. You cannot smell, feel or see 15 percent sunflower oil in argan, and neither can your customers, which is exactly why it happens. The only defence available to a small maker is a supplier who will send a certificate of analysis that includes the sterol profile, not just the fatty acid profile and a peroxide value. The questions to ask are in sourcing ingredients.
Cooperatives, geographical indication and what a certificate covers
Much argan is processed through women's cooperatives in the Souss region, and the social story around them is a real part of why the oil sells. Morocco registered Argane as a protected geographical indication in 2010, and it is recognised in the European Union under the bilateral agreement on geographical indications.
Be precise about what that buys. A geographical indication protects origin and a defined production process. It does not certify a tocopherol content, it does not test for adulteration, and it says nothing about the batch in front of you. Organic certification covers agricultural practice and permitted inputs. Fair trade schemes cover price, governance and how the premium is distributed. None of the three is an authenticity test, and a bottle can carry all of them and still be cut with sunflower oil somewhere downstream.
The same caution applies to what you print. A cooperative sourcing claim on your label is a claim you are repeating from a supplier, not one you verified, and under UK and EU rules the responsible person owns it either way. Natural and organic certifications sets out what each scheme does and does not check, and which of them will ask for evidence if you use their mark.
Shelf life and storage
Twelve to twenty four months from pressing, with the grade deciding where in that band you land. Deodorised cosmetic oil sits at the long end because stripping removes the free fatty acids and aldehydes that catalyse further breakdown, though it has fewer tocopherols to defend it. Virgin cosmetic sits in the middle. Roasted culinary is shortest, and its opening date matters more than its production date.
Store below 20 C, dark, in a full container. Headspace oxygen is the variable a small maker actually controls, so decant a large purchase into smaller bottles rather than repeatedly opening a five litre drum. A finished balm inherits the oil's remaining life, not a fresh one, which is why an oil bought at ten months old should not be going into a product with an eighteen month durability date. The honest verdict against high oleic sunflower
High oleic sunflower runs 80 to 90 percent oleic and 5 to 9 percent linoleic, with an iodine value in the high 70s to high 80s and 500 to 700 mg per kg of tocopherols, mostly alpha. It costs a small fraction of argan per kilogram. On oxidative stability it wins outright, because it simply has fewer bis-allylic positions to attack. On tocopherol quantity it is close to argan and only loses on distribution. Details are in high oleic oils.
What argan actually offers over it is a lighter, drier finish traceable to its linoleic fraction, a faint nutty character, gamma rather than alpha tocopherol, and a name that means something to buyers. Those are real, but they are small, and inside a balm carrying 10 to 15 percent wax most of the sensory difference is buried by the structurant. The decision rule. Make your base twice, once with argan at your intended level and once with high oleic sunflower in its place, and run a blind triangle test on people who are not you, following sensory testing. If testers cannot pick the argan version reliably, the ingredient is buying you a line on a label and nothing else, and the money is better spent on the wax, the packaging or a proper antioxidant dose. If they can pick it, and your product is a face or beard item where finish is the whole proposition, 10 to 15 percent is a defensible choice. Below 5 percent it is decoration, and above 20 percent you are paying twice for a difference that stopped scaling.
Frequently asked questions
Is argan oil good for lip balm?
It works but rarely earns its cost there. At 5 to 12 percent it adds a light, low residue feel, and above that its nutty odour starts to show through. A lip balm is mostly wax and butter by weight, so the liquid oil has limited influence on the finished feel, and cheaper high oleic oils perform much the same in that role.
What is the difference between cosmetic and culinary argan oil?
Culinary argan is pressed from kernels roasted for fifteen to thirty minutes, which creates the strong toasted sesame aroma and raises free acidity to around 0.5 to 1.5 percent. Cosmetic argan uses unroasted kernels and is filtered or steam deodorised. Use the cosmetic grade in balms. Roasted oil will make the product smell of food and has a shorter life.
Does argan oil stop a balm going rancid?
No. Argan carries 600 to 900 mg per kg of tocopherols, so at a 10 percent inclusion it contributes only 60 to 90 mg per kg to the finished product, roughly one twentieth of a deliberate 0.2 percent mixed tocopherol dose. Its own tocopherols protect the argan itself. If you want antioxidant protection across a formula, add it separately at 0.1 to 0.5 percent.
How can you tell if argan oil has been adulterated?
Not by smell, feel or appearance. Sunflower and soybean added at 10 to 20 percent hide inside the published fatty acid ranges. The reliable markers are the sterol profile, since genuine argan is dominated by schottenol and spinasterol with almost no campesterol, and the tocopherol distribution, which is gamma dominant in argan and alpha dominant in sunflower. Ask for a certificate of analysis showing sterols.
Is argan oil safe for someone with a nut allergy?
Do not assume so. The kernel is botanically a drupe seed rather than a true tree nut, but that distinction has no standing in allergen labelling and refined status does not guarantee protein removal from a cold pressed oil. Declare it plainly and do not market an argan product as nut free.
How long does argan oil keep?
Twelve to twenty four months from pressing, depending on grade and storage. Deodorised cosmetic grade sits at the longer end, virgin cosmetic in the middle and roasted culinary shortest. Keep it below 20 C, dark, in a full bottle with minimal headspace. A finished balm inherits whatever life the oil has left, not a fresh count.
